Whole Wheat Banana Oat Muffins

Ingredients: Yields 12 muffins
Muffin
  • 1 Cup Hudson Cream Whole Wheat Flour
  • 1 1/2 Cups Oats
  • 1/2 Cup Sugar
  • 1 1/2 Teaspoons Baking Powder
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon Cinnamon
  • 1/4 Teaspoon Salt
  • 1 Egg
  • 1/2 Cup Oil
  • 1 Teaspoon Vanilla
  • 1 1/2 Cups Bananas- very ripe (about 4)
Topping
  • 1/2 Cup Oats
  • 2 Tablespoons Hudson Cream Whole Wheat Flour
  • 1/4 Cup Brown Sugar
  • 2 Tablespoons Butter, melted
  • 1/2 Teaspoon Cinnamon
Directions:
  • In a small bowl, combine flour, oats, baking powder, baking soda, cinnamon, and salt until well mixed.  
  • In a separate bowl, beat together egg, oil, sugar and vanilla until well mixed.  
  • Add in the dry ingredients and mix just enough to combine, taking care not to over-mix.
  • Add the bananas and mix just until combined. 
​For the topping:
  • Melt the butter and stir all ingredients together until well mixed.
  • Pour into greased or paper lined muffin tins.  Add 1 Tablespoon of topping to each muffin.
Cook Time & Temperature: 
  • Bake at 375 degrees for 18 minutes, or until tops are brown.
