Coffee cake

Ingredients:
Yields: 9x13 pan
  • 2 ¾ Cups 60/40 Flour Blend (12 ounces)
  • 1 Cup Granulated Sugar (8 ounces)
  • 3 Teaspoons Baking Powder (3/8 ounce)
  • ½ Teaspoon Salt
  • 1-ounce Non-Fat Dry Milk
  • 1 Cup Vegetable or Canola Oil (7 ounces)
  • 3 Eggs, beaten
  • 2 Teaspoons Vanilla (3/8 ounce)
  • 1 Cup Water (8 ounces)
Filling/Topping
  • 1.5 Cups Brown Sugar (10.5 ounces)
  • 3 Teaspoons Cinnamon (1/4 ounce)
  • ¼ Cup Butter, melted

Directions:
  • In a large bowl, mix flour, sugar, baking powder, salt and non-fat dry milk until well combined. 
  • In a separate bowl, combine oil, eggs, vanilla and water. Whisk until well mixed. 
  • Pour wet mixture into dry mixture and stir until just combined. 
  • In a small bowl, mix the filling toppings until crumbly.
  • Pour ½ of the batter into a greased 9x13 pan. 
  • Sprinkle ½ of the filling over the batter. 
  • Pour the remaining half of batter on. 
  • Sprinkle the remainder of the filling on top.  
  • Bake at 375 degrees F for 28 minutes.
