blueberry muffins

Ingredients:
Yields: 12 large muffins
  • 2 ¼ C 60/40 Flour Blend (9.5 ounces)
  • 3 Teaspoons Baking Powder (0.5 ounces)
  • 1 Teaspoon Salt (0.25 ounces)
  • ½ Cup Granulated Sugar (4 ounces)
  • 1/3 Cup Vegetable or Canola Oil (2 ounces)
  • 1 ½ Cups Water (13 ounces)
  • 1.6 ounces Non-Fat Dry Milk
  • 1 Cup Fresh or Frozen Blueberries (or other fruit)

Directions:
  • Combine flour, baking powder and salt, sugar and non-fat dry milk in a bowl and stir until well mixed.   
  • Add in water and oil.  Stir just until mixed- taking care not to over-mix.   
  • Fold in Blueberries. 
  • Divide batter equally into a greased muffin tin. 
  • Bake at 400 degrees F for 18 minutes.
